Cauliflower Pizza Bases

Ingredients

500g of cauliflower- roughly chopped

90g of almond meal
40g of grated Parmesan cheese
3 organic eggs lightly beaten

Sea salt + pepper to season
Tomato paste to spread on bases

Topping options:
Mozzarella cheese, rocket, mushrooms, olives, tomato, capsicum

Makes 2 pizza bases.

Method

Preheat oven to 200°C.
To make base, add cauliflower into a food processor and blitz until it is a fine crumb.
Add to a large bowl and add whisked eggs, salt and pepper, almond meal and Parmesan. Divide mixture into two large dough balls.
Line 2 circle pizza trays with baking paper and press each dough in.
Place base in the oven and cook for 20-30 minutes until golden. This is an important step for a crispy base!
Remove and add 1-2 teaspoons of tomato paste on the base and spread evenly. Place all your favourite toppings on top. Place back into the oven for 5-10 minutes until melted and golden.
Top with fresh rocket.
